Are you missing the fun and ease of having a muffin? I know that I struggled with missing some comfort foods and making muffins is a fantastic way to hit the cravings spot. Give these delicious muffins a try.
1IP Wildberry yogurt drink mix (dry)
1IP Apple or Maple oatmeal mix (dry)
1 tsp. Baking powder
1 tsp. Sugar free sweetener, granular
1/3 C. Liquid egg whites
1 tsp. Olive oil
1 T. Skim milk
2 T. Walden Farms blueberry syrup
- Preheat oven to 350.
- In a medium bowl, mix together the dry ingredients.
- Add liquid ingredients. Stir to mix; batter will be thick.
- Spray a regular size muffin tin with cooking spray; spoon batter into muffin tin making 6 muffins.
- Bake 9-11 minutes or until a toothpick inserts into center of muffin comes out clean.
Servings: 6 muffins= 2 unrestricted; 3 muffins= 1 unrestricted
